Sadly, we are slowly approaching the end of Summer 2018. From all of us at the Spring Hill Weight Loss Clinic, we hope you had a great season! To celebrate the beginning of Fall, we would like to share with you 3 recipes that will get you all excited for the upcoming “pumpkin season.” Fall is the best time to try out new recipes and a great opportunity to cook at home more often. It is also a great time to get back on track if you happened to fall off the “healthy” wagon during those lazy summer months. Without further ado, here are three fall recipes that are not only absolutely delicious, but also weight loss-friendly!
1. Pumpkin Spice Latte
2 tbsp of pumpkin puree (it’s really easy to make at home if you can’t find it at the store! Just roast a few slices of pumpkin in the oven until soft, and puree in the blender. You can store it in a jar or an airtight container for up to a week in the fridge)
1 cup of plant-based milk (coconut, rice, almond, etc.)
1 tbsp of honey / agave or maple syrup
Spices: cinnamon, ground ginger, ground coriander seeds, ground cloves, ground nutmeg
Heat all ingredients in a small pan. Once hot and steamy, you can either blend it or use a sieve to get rid of the pumpkin or spice chunks. A small tip: if you like your latte extra frothy, whisk the mixture until it foams. We don’t have to remind you that this beautiful beverage tastes best hot ?
2. Veggie Stew
1 cup of dried red lentils
1 cup of dried green lentils
1 can of black beans
1 can of red beans
4 cloves of garlic
1 big onion
1 celery stalk
2 cans of tomatoes (chopped)
1 tbsp of tomato paste
Spices: salt, pepper, paprika, chili, garam masala, cumin
Chop the onion, carrot, celery and garlic very finely, or use a hand blender to do the work for you! In a large pan, heat up 2 tbsp of olive oil and saute the vegetables with the spices for 15 minutes. Add the rest of ingredients to the pan: lentils, beans (drained and rinsed), canned tomatoes, tomato paste, and the spices. Cover with a lid and let simmer for about an hour. If you’d like the stew to be slightly thicker, uncover the pan for the last 10 minutes of cooking to let the sauce reduce.
3. Hearty Seasonal Soup
250 g of pumpkin, chopped into small cubes
1 carrot, sliced
1 onion, chopped finely
1 potato, chopped into small cubes
250 g of kale or baby spinach
500 ml of vegetable stock
In a pan, saute all vegetables, apart from the greens. After 10 minutes, add the stock and cover the pan. Let the vegetables cook for about 10 minutes or until soft. Add kale or spinach and remove from the heat. Blend the soup until smooth.
