Holiday Season is upon us. Therefore, our Brooksville Dietitian Susan has a surprise for you – a fool-proof, quick and easy Gingerbread Cookies recipe. If you are trying to lose weight but you do not want to miss out on any of the holiday magic, you need to try these amazing cookies. They are refined sugar-free, gluten-free, and guilt-free!
1 ½ cups almond flour (ground almonds) or coconut flour
1 cup rice flour
4 tablespoons coconut sugar
2 tablespoons gingerbread spice mix (cinnamon, nutmeg, cloves, anise, ginger)
1 tsp baking soda
½ cup maple syrup
⅓ cup coconut oil, melted
1. In a mixer bowl, mix together almond flour, rice flour, coconut sugar, spice mix and baking soda.
- In a separate bowl, mix maple syrup with the melted coconut oil and slowly pour the mixture into the dry ingredients while still mixing.
- Mix together for a few minutes until well combined. The dough should be smooth and dry. If need be, add more almond or rice flour. Let the dough rest a few minutes while you preheat the oven to 350 degrees.
- Roll the dough to a centimeter thick layer and cut your cookies. Place them on the baking tray sprayed with the cooking oil or on the baking sheet, and bake for about 12-15 minutes.Once cooled, they are ready to eat. Enjoy!
